Fudgy Brownies (like the boxed mix)

I have a favorite brownie recipe, too.  Kelly and I should have a bake off! (Or at least try out each others' recipes....)  I really like how fast these come together, and how they build my biceps. ; )  This recipe comes from melskitchencafe.com.

2 1/2 sticks (20 Tab.) butter
2 1/4 c. granulated sugar
1 3/4 c. unsweetened cocoa powder (natural or dutch-process)
1 tsp. salt
1 tsp. vanilla extract
4 large eggs
1 c. flour
1 c. chocolate chips (optional)
toffee pieces (optional)

Position a rack in the lower third of the oven and preheat to 325*.  Line inside of 9x13 pan with foil.  Lightly grease with cooking spray.

Combine butter, sugar, cocoa and salt in medium microwave-safe bowl.  Microwave for one minute intervals, stirring in between, until the butter is melted and mixture is smooth.  Set aside until it cools slightly (warm, not hot).  It will look gritty, but will become smooth after other ingredients are added.

Stir in vanilla with spatula.  Add eggs one and a time, stirring vigorously after each one.  When the batter looks thick, shiny and well blended, add the flour and stir until you cannot see it any longer.  Add chocolate chips (if desired), then beat vigorously for 40 strokes.  Spread evenly in lined pan.  Sprinkle with toffee bits (optional).

Bake 25-30 minutes, until set but still slightly sticky in the center when a toothpick is inserted.  Let cool completely on wire rack.  I like to refrigerate them and eat chilled.
