1 pound sausage
32 oz spaghetti sauce
1 pkg frozen chopped spinach (thawed)
2 eggs
1 pound ricotta cheese
1/2 pound mozzarella cheese, shredded
1 tsp onion salt
1/4 tsp garlic powder
1/8 tsp nutmeg
2 Tbls parmesan cheese
1. Brown meat in skillet and add spaghetti sauce. Cover pan and reduce heat to low.
Simmer 15 minutes
2. Place thawed spinach in a strainer and press out moisture.
3. Beat eggs and add spinach, ricotta, mozzarella, onion salt, garlic powder and nutmeg. Mix until blended.
4. Pour half of sausage mixture into bottom of 9x13 pan. Stuff cooked shells with cheese/spinach mixture. Arrange them as the next layer. Pour remaining sauce over the top. Sprinkle with parmesan. Bake 350* for 30 minutes. Serves 6.
