Banana Sheet Cake

This recipe tastes like banana bread with frosting! It's a low-cost, yummy dessert recipe that feeds a lot of people.

Cake:
2/3 c. butter
2 1/4 c. flour
1 2/3 c. sugar
1 1/4 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 1/4 c. mashed bananas
2/3 c. buttermilk
2 eggs
1 tsp. vanilla
1 c. chopped pecans (optional)

In one bowl, cream butter and sugar. Add mashed bananas, eggs and 1/3 c. of buttermilk. In another bowl, mix flour, soda, baking powder and salt. Add half of dry ingredients to wet ingredients and mix until moistened. Mix in remaining 1/3 c. buttermilk and vanilla. Mix in remaining dry ingredients. Fold in 1/2 c. of optional pecans. Pour into greased 11 x 17 sheet pan. Bake at 350* for 30 min. Cool completely.

Frosting:
1/4 c. butter
1 lb. powdered sugar
1 tsp. vanilla
3-4 Tab. milk (if necessary)
dash of salt

Cream all ingredients together except milk. Add milk as needed if frosting is too thick. Spread on cooled cake. Sprinkle with 1/2 c. of optional pecans.
