This one's from Debbie, and is probably my favorite salad ever (so far)... It makes a TON of salad, so I usually half everything. I'll follow this post with my favorite candied pecans recipe.
Dressing:
2/3 c. olive oil
1/4 c. apple juice
1/4 c. apple cider vinegar
2 garlic cloves - minced
1/4 tsp. salt
1/4 tsp. pepper
Salad:
12 c. mixed salad greens (usually use "Spring Mix")
2/3 c. bleu cheese crumbles
2 lg. green apples - thinly sliced
1/2 c. green onions - sliced
1 c. glazed pecans, walnuts or almonds - can rough chop if preferred
Blend dressing and pour over mixed salad ingredients just before serving.
