Mix together:
3 cups flour
11/2 cups water (warm)
1 tsp salt
1 tsp vinegar
1/4 tsp yeast
Dough will be sticky. Mix in bowl and cover. Let rise for 12 hours.
Pour dough onto well-floured counter (it is almost like a thick pancake batter consistency),
being careful not to pop the bubbles that have formed.
Knead by folding sides into the middle (like an envelope) and pinch them all together at the center. Grease a bowl with butter and sprinkle sesame seeds into it. Place dough in the bowl, the pinched side down. Cover and let rise for 2 hours.
When there is a half hour of rising time remaining, place dutch oven (with lid on) in oven and preheat oven to 450 degrees (it can be anywhere between 400 and 500, depending on your oven...you'll have to
experiment). When bread has finished rising, remove dutch oven. dump the loaf into it, so that the pinched side covered with sesame seeds is on top. Cover with lid, return to oven and cook for about 30 minutes. To get
a golden, crispy crust, remove the lid for the last 5 minutes of baking. Oua-la!
