CAFE RIO MEAL
Crock Pot Pork Barbacoa
4-5 lb pork roast
onion soup packet
12 oz Dr. Pepper
4 oz. taco sauce, hot tomato sauce
1 c. brown sugar
dash cumin
1/2 pkg- full pkg. taco seasoning
Put meat in crock pot, sprinkle with onion soup, cover with water half way.
Cook meat 4-6 hours on high. Drain and shred meat. It should be tender enough to shred. If it doesn't shred easily, cook longer. After meat is shredded, add the remaining ingredients. Cook on high for one more hour.
Cilantro-Lime Rice
1 cup uncooked rice
1 teaspoon butter or margarine
2 cloves garlic, minced
1 teaspoon lime zest
1 can (15 oz) chicken broth
1 1/4 cup water
2 tablespoons freshly squeezed lime juice
2 teaspoons granulated sugar
3 tablespoons fresh chopped cilantro
In a saucepan combine rice, butter, garlic, lime peel, chicken broth and water. Bring to a boil. Cover and cook 15-20 minutes, until rice is tender. Remove from heat. In a small bowl combine lime juice, sugar and cilantro. Pour over hot cooked rice.
Black Beans
1 can black beans, rinsed and drained
1 1/3 cup tomato juice
2 cloves garlic, minced
1 teaspoon ground cumin
2 tablespoons olive oil
1 1/2 teaspoon salt
2 tablespoons fresh chopped cilantro
In a nonstick skillet, cook garlic and cumin in olive oil over medium heat until you can smell it. Add beans, tomato juice, and salt. Continually stir until heated through. Just before serving stir in the cilantro.
Pico De Gallo
4 plum tomatoes, chopped
1 small onion, finely chopped
1/4 cup minced fresh cilantro
1 serrano pepper, seeded and minced
1 garlic clove, minced
1 teaspoon lime juice
1/4 teaspoon salt
1/4 teaspoon pepper
Baked tortilla chip scoops
Cafe Rio Salad Dressing
1 jar Herdez salsa verde
1 cup mayonnaise
1 pkg. dry buttermilk ranch dressing
1 T. chopped canned jalapenos
1/4 bunch clinatro
1 can evaporated milk
2 cloves minced garlic
Blend all ingredients together in blender until smooth.
Then layer like they do at Cafe Rio.... Tortilla (Costco's uncooked tortilla's are the best!), rice, meat, beans, montery jack cheese, romaine lettuce, pico, and dressing
