BLACKBERRY CHOCOLATE CHUNK ICE CREAM
1 1/2 pts blackberries (about 9 oz)
1/4 c sugar
1 1/2 qts vanilla ice cream softened
1/2 c roughly chopped dark chocolate.
1) Mash berries with a fork in microwavable bowl. Stir in sugar. Microwave, stirring every 20 seconds until sugar has dissolved, 1 minute. Let cool completely
2) Beat ice cream with s stand mixer with paddle attachment just until smooth, about 30 seconds
3) Scoop ice cream into freezer-safe straight sided container, alternating with blackberry mixture & chocolate.
4) Fold ice cream to form a swirl, pulling up from the sides & bottom. Press plastic wrap onto surface; cover. Freeze until firm.
