
I keep these on hand (from Costco) because everyone in my family will eat them. This is just one of the meals we make out of them. I probably wouldn't serve at a party because it's not that pretty, but it's a solid week-night dinner.
2 Tab. butter
1 pkg. Aidells chicken apple sausage, cut into 1 inch slices
1 red onion, thinly sliced
2 green apples, cored and sliced
1/4 c. apple cider or juice
1 c. heavy cream
1 lb. pasta, cooked to al dente (could use brown rice pasta for a gluten-free meal)
Note: I usually use some pasta akin to egg noodles or spirals.
Melt 1 Tab. of butter in very large skillet over medium/high heat and brown sliced sausages. Remove sausages from pan, add the other Tab. of butter and onions to pan. Sautee over medium heat for 5-7 min. or until onion is soft. Add apples and sautee 2-3 min. longer - they should still be firm.
Pour in cider and reduce liquid over high heat 3-4 min. or until sauce is syrupy. Add cream and cook, reducing liquid by half. Return sausage to pan and cook 1 more minute.
Mound pasta on platter. Add sausage mixture over the top and serve.
