This has a bright fresh flavor.
DRESSING
3 Tab champagne or Red Wine vinegar
1 1/2 Tab minced shallots
1/3 cup olive oil
Salt & Pepper to taste
SALAD
1/2 c uncooked quinoa
4 cups Tuscan Kale, julienned
3 Tab toasted Sunflower seeds
1/4 cup diced red pepper
2/3 cup halved red grapes
1/4 cup fresh grated parmesan
1/4 cup grated manchego
Zest & juice of 1 lemon
Steam quinoa in 1 cup water. Fluff with fork and let cool.
Mix dressing ingredients together.
Toss Salad with dressing & Serve.
