PASTEL AZTECA



Latins and Gringos both like this recipe.  I serve it with a green salad or fruit.

1 pkg mushrooms, sliced
(The large container of sliced mushrooms at Costco makes 4 recipes)

1 medium onion, sliced

1 cup chopped Rajas Poblanas (in freezer section by the peas)

Knorr Consomè ( or chicken bouillon) 

1-2  cups frozen corn

6 cups Shredded cooked chicken ***

1 ½ cups sour cream (La Crema)

2 ½ cups Grated cheese

12 corn tortillas or 12 already prepared tostados



*** To prepare Chicken-  1 bag of frozen chicken breasts into a crockpot with a little water & sprinkle a little chicken boullion in the water. Set crockpot on low for 8-10 hours.  Shred with forks while still warm.  One bag of Costco chicken breast can make about 3 recipes.

Saute onion in small amount of oil in large skillet. Add rajas poblanos, sprinkle 2-3 teaspoons of pollo consomè in pan on top of the rajas. Add corn and sliced mushrooms. Add shredded cooked chicken.  Sprinkle a 2-3 teaspoons consomè over top.  Put lid on briefly to steam everything together. Remove lid & let liquid evaporate. Remove from heat & add sour cream.

In another pan fry 12 corn tortillas until crisp.  (Or use premade baked ones from Costco) . 

Place 6 tortillas on bottom of 9x13 . They will overlap. No need to spray the pan.
Divide skillet mixture in half. Place half of the mixture on top of the 6 tortillas. Sprinkle 1 cup cheese over top.  Repeat layers with tortillas, chicken mixture & cheese. Cover with foil & bake at 350* (176 Celsius) for 30 minutes or until heated through.

I like to make several and freeze them before baking.
