It is SCD friendly. They are yummy and live up to the name of Easy.
6 Servings Prep Time 10 min Cook Time 8 min
2 (5 oz) cans tuna packed in water
1/2 c blanched almond flour
1/4 c chopped scallions
1 egg
2 Tab chopped fresh Italian parsely
2 Tab grated red onions
1 tea grated lemon zest
1 Tab freshly squeezed lemon juice
1 1/2 tea Dijon mustard
1/2 tea ground black pepper
1/4 tea salt
1 Tab EVO
Lemon wedges for serving
Tartar sauce for serving
DIRECTIONS
1. Drain liquid from tuna, reserving 1 Tab liquid. Place tuna and 1 Tab liquid in medium sized bowl. Break up tuna with fork.
2. Add all of the remaining ingredients to the bowl & mix. Adjust seasonings to taste. Form mixture into 6 patties.
3. Heat oil in skillet over medium heat. Once hot add patties & cook for 4 min until a golden crust forms. Flip & cook an additional 3-4 min.
4. Serve with lemon wedges and tarter sauce.
