3 thighs and 3 legs: bone in skin on.
sprinkle onion powder, garlic powder, salt, pepper on the chicken and drizzle olive oil over the top
OR blend1/2 onion, 4 garlic cloves, salt and pepper, and drizzle over the top with the oil.
Let it rest 20 minutes
put a cup water and 4 tomatoes with a small cross cut at the bottom to boil 6 minutes, cool and peel
Fry chicken 2 tblsp oil just enough to seal/brown the chicken
Set the chicken aside and sautee one whole onion sliced and 2-3 cloves minced garlic
cut up the tomato into chunks and add.
add 2-3 laurel leaf.
Add the chicken back, bring to boil, lower and cover and cook for an hour.
