Knot Rolls

3 cups milk, scalding hot
3/4 cup margarine
1 cup instant potato flakes
3/4 cup sugar
1 Tbl salt
2 cups flour
4 eggs, whipped
1 Tbl yeast
6 cups flour

orange filling: (optional)
1/2 cup sugar
grated rinds of 2 oranges

orange glaze: (optional)
4-5 cups powdered sugar
1/3 cup orange juice
1 1/2 Tbl vanilla

1. Mix milk, margarine, potato flakes, sugar, salt and flour together in a large bowl until warm. Add eggs, yeast and flour. Knead, put dough in a bowl with a towl over it. Let rise 1 hour.

2. To make rolls, divide dough in half. Roll out into a rectangular shape. Spread a generous amount of butter over the dough. For orange rolls, mix filling ingredients together with a fork and sprinkle over butter. Fold dough 1/3 over and 1/3 under to form 3 layers. Cut into 24 strips with a pizza cutter (each will be about 1 inch thick). Twist hands and tie to make a knot. These rolls can also easily be made into crescent shaped rolls instead of knot shaped.

3. Put rolls on cookie sheets, let rise 2-3 hours. Bake in a preheated oven at 375* for 10 minutes. Brush tops with butter for plain rolls, or mix glaze ingredients together and drizzle over orange rolls.
