Salad:
1 1/2 cup monterrey jack cheese, grated
2 packages precut baby spinach, washed
1/2 head iceberg lettuce (optional)
1/2 red onion, thinly sliced
1/2 pound bacon, fried and chopped
1 pkg mushrooms, sliced
Dressing:
1 TBL poppy seeds
1/2 Cup Sugar
1 TBL grated red onion
1/2 cup Apple Cider Vinager
1 cup vegetable oil
1/2 tsp dry mustard
1 tsp salt
1. In large bowl, combine all salad ingredients together and toss.
2. In blender combine all dressing ingredients, except oil. Blend. Keep blending and add oil gradually.
3. Pour desired amount of dressing over salad and toss again. Serve immediately. Yields 20-24 servings (A LOT!)
