Bacon and Egg Bars
1 pound bacon, cooked and cut/crumbled
1 cup margarine
1 cup brown sugar
2 1/4 cups flour
1/2 tsp salt
2 1/2 cups uncooked oatmeal
12 eggs
4 oz cream cheese
1/2 cup milk
1. Cream together margarine and brown sugar. Mix in flour, salt, and oatmeal. Mixture should be crumbly. Press one half of this mixture into a sprayed 9x13 pan.
2. Whip cream cheese and milk together. Add well beaten eggs. Pour egg mixture into a large skillet. Cook over medium low heat, stirring constantly, until mixture thickens to a pudding-like consistency.
3. Put crumbled bacon over oatmeal mixture, then spoon egg mixture over bacon. Top with remainder of oatmeal mixture. Bake at 400* for 20-25 minutes. Bars may be made a day ahead and reheated. Serves 10 to 12.
