Pineapple Upside-down Cake

8 1/2 oz. can sliced pineapple (drain and reserve juice)
3 Tbls butter
1/2 cup brown sugar
maraschino cherries

1/3 cup butter
1/2 cup sugar
1 egg
1 tsp vanilla

1 cup flour
1 1/4 tsp baking powder
1/4 tsp salt

1. Melt butter in 8" square baking pan. Add brown sugar and 1 tbls of reserved juice.

2. Arrange pineapple slices in bottom of pan with maraschine cherries inside each slice.

3. Cream butter and sugar together and add egg and vanilla.

4. In another bowl, sift flour, baking powder and salt together.

5. Add flour mixture to creamed mixture alternately with 1/2 cup of reserved juice. Beat well. Spread over pineapple slices and bake at 350* for 40 to 45 minutes.

6. Cool five minutes and then turn upside-down on serving plate.
