6 medium potatoes
1/2 cup green onions
1/4 cup melted butter
2 cups grated cheese
Soup mixture:
2 cans cream of chicken soup
1 cup sour cream or plain yogurt
2 Tbls milk
1/2 cup canned evaporated milk
1 cup crushed Ritz crackers
1. Cook, cool, peel and dice potatoes (or use frozen pre-cut potatoes). Place in 9x13 greased pan.
2. Sprinkle onions, melted butter and one cup of cheese over the top.
3. Mix together chicken soup, sour cream, milk and evaporated milk. Pour over potatoes. Cover with one remaining cup of cheese. Cover with crushed Ritz crackers. Bake at 350* for 30 minutes.
