Mini-Pizzas

I know this recipe seems elementary, but we've been having a weekly mini-pizza night here, and it's been a real crowd-pleaser.  I change up the toppings each week, mostly using leftovers in the fridge.  As long as it's on bread and has melted cheese on top, the kids gobble it up.  I love how quickly they come together.

Preheat oven to 450*.

Start with a bread. (Lay it right on your cookie sheet - no pan greasing necessary.)
We've tried:  Naan, wheat flatbread, wheat pitas, or wheat tortillas.  TJ's has a nice selection.

Slap on a sauce.
We've tried: jarred pesto or spaghetti sauce.

Sprinkle some cheese.
We've only used mozzarella so far.

Layer on the veggies. (Not all of these, just pick a few.  Feel free to saute in a little oil or steam before you add.)  We've tried: broccoli, mushroom, peppers, onions, olives, big slices tomato or sliced grape tomatoes, beans.

Add a tiny bit more cheese (if you want) and/or nuts.
More mozzarella and/or grated parmesan.  We love pine nuts here.

Shake on some spices. (Feel free to use them all together.)
We've tried: oregano, basil, garlic powder, salt, pepper.

Slide your pan into the oven and bake for about 10 minutes or until the cheese just starts to brown on top.

Lynzie's favorite combo: flatbread, spaghetti sauce, mozzarella, steamed broccoli, sauteed red onion and mushroom (in EVOO/butter with garlic powder, salt & pepper), parmesan, and all the spices.

Another family favorite: any bread, pesto sauce, mozzarella, sliced tomato, parmesan, sliced pine nuts, and all the spices.

Other combo ideas???  How about a Mexican style pizza with black bean puree as the "sauce" and mexican spices on top of your favorite mexican cheese and veggies?  Oh, what fun it is to think of the options.
