Granola
8 cups rolled oats
2 cups raw sesame seeds
2 cups raw sliced or slivered almonds (or a combination of both)
2 cups raw sunflower seeds
2 cups raw cashew pieces
2 cups raw pepitas (optional)
2 cups coconut
1 cup ground flax meal
Mix all together in a large bowl.
In a saucepan heat until dissolved:
1 cup canola oil
2 1/2 cups honey
1 Tbsp vanilla
2 tsp cinnamon
2 1/2 tsp salt
2 tsp maple extract
2 tsp pure almond extract
Pour sauce over grain mixture. Stir well. Pour mixture onto 2 parchment lined baking sheets. Bake at 325 for about 30 minutes, stirring every 5 minutes or so...just until the granola is golden brown. Remove from oven and let cool completely. Store in airtight container. If you want to add dried fruit (cranberries, blueberries, apricots, raisins, etc), add them to each individual serving just before you eat it. If you add it to the large batch of granola it will become soggy as you store it.
