Ashley's Quinoa Salad

Another yummy salad from Ashley....

Quinoa Salad
1 1/2 cups uncooked quinoa
2 1/2 cups water
Steam quinoa and water in small covered saucepan over low heat until water is absorbed and quinoa is fluffy. Stir with a fork. Transfer to a medium bowl and chill until cooled.
Once quinoa is cooled, add:
1 cup halved grape tomatoes
1 cup crumbled feta cheese
1 1/2 cups sweet corn (either frozen, thawed or fresh, cut off the cobs)
1 1/2 cup chopped, peeled cucumber
1 cup chopped fresh herbs (parsley or basil are great)
2/3 cup chopped green onions
toasted pepitas

Whisk together:
1/4 cup red wine vinegar
2 Tbsp fresh lemon juice
2-3 tsp honey
1/2 cup olive oil
salt and pepper to taste

Pour dressing over salad just before serving. Enjoy!
