Roasted Eggplant Spread
1 Lg eggplant
2 red bell peppers
1 red onion
2 garlic cloves minced
3 Tbls olive oil
1 1/2 tsp salt
1/2 tsp pepper
2 Tbls tomato paste
Cut all into 1" cubes. Toss with oil, S&P, garlic. Roast 45 min on sheet pan at 400 turning once after 25 min. Place in food processor or blender. Add tomato paste. Pulse till smooth.
Toast pita and cut into triangles.
