Tortilla Soup - Robin Beadles

At first glance this soup appears on the light side, but when you pile all the toppings into your bowl it becomes quite amazing!  It was a fun group dinner.   Finished the meal with Flan. See the recipe I added also. 


Heat in large pan on stove:

4 cups tomato juice
4 cups water
4 chicken bouillon cubes
Juice of 1 large lime
2 T chili powder
1/2 tsp garlic powder
1/2 c Chopped fresh cilantro

Prepare toppings:

Shredded Mozzarella cheese
Chopped white onion
Chopped ripe avocado
Small limes cut into wedges ( to squeeze into individual bowls)
Shredded cooked chicken (optional)

Serve hot soup and added toppings over a bowl of crumpled tortilla chips.  Enjoy!
