2 Tbl olive oil
1/2 cup onion, diced
3 cloves garlic
black pepper to taste
1 can green chilis, diced
1 tsp oregano leaves
2 tsps cumin
1/2 Tbl chili powder
1/4 bunch fresh cilantro, chopped
2 cans tomatoes, diced
6 Tbl lime juice
1/2 bunch green onions, chopped
2 cups cooked chicken
8 cups chicken stock
8- 6in. tortillas, quartered
shredded monterrey jack cheese
1 large avocado, diced (optional)
4- 6in. corn tortillas, cut into strips
1. Heat oil in large pot. Barely sautee onions and garlic with black pepper. Add chilis, oregano, cumin, chili powder, cilantro and lime juice. Add tomatoes, chicken, stock, and first 8 tortillas. Simmer 30 minutes. Add tortilla strips, adjust spices and simmer for 5 more minutes. Pour into individual bowls and garnish with cheese and avocado.
