Candied Pecans

I found this one online.  These are good enough to eat alone, but can be thrown in a salad, too.  I usually have to hide them so Danny doesn't eat them all before the salad is served.  I recommend following the measurements closely since the last time I made them I tried to eyeball it and messed them up. : )  I do usually half or quarter the recipe since it makes a lot.

1 egg white
1 Tab. water
1 lb. pecan halves (FYI, 1 lb = 4 c.)
1 c. sugar
3/4 tsp. salt
1/2 tsp. cinnamon

Preheat oven to 250*.  Whip egg white until frothy.  In separate bowl, mix sugar, salt and cinnamon.  Toss pecans with egg white.  Remove pecans from egg and toss with sugar mixture until well coated.  Spread on greased cookie sheet (or silicone baking mat).  Bake 1 hour, stirring every 15 minutes.
