Chocolate Chip Cookie Balls

These are no-bake, gluten free, nutrient-packed little energy bites, and can be kept in the freezer for months. They're also pretty tasty.  Thanks to cousin Ashley for the recipe.

1 c. oatmeal (I used quick oats.)
1/2 c. peanut butter (Don't you dare use the kind with hydrogenated oils, please!  This is a health food!)
1/3 c. honey
1 c. coconut flakes (I used unsweetened flakes.)
1/2 c. ground flaxseed
1/2 c. mini chocolate chips (or cranberries or raisins)
1 tsp. vanilla

Mix everything in a bowl until well incorporated.  Let chill in the fridge until cold.  Roll into balls and enjoy!  Store leftovers in ziploc in fridge or freezer.
