White Refried Beans

Really easy to make

I use either pinto or northern white beans
I clean and soak beans overnight or at least 8 hrs – about 4 cups beans, and double that in water
Then rinse and put in crock pot with about 6 cups water, ¾ cup vegetable oil (can add more oil if beans appear dry)
I used powdered chicken bullion, but can substitute chicken broth for a few cups of water
Then I add 2-3 jalapenos and 2 large poblanos
In crock pot I cook for at least 8 hours, then mash with potato smasher – can add more boullion or oil as necessary
If you want to cook on stovetop, I cook on medium for about 2 ½ to 3 hours, but you have to constantly check that the bottom doesn’t burn. Crock pot is easier for me!
