Mexican Roasted Chickpeas

I roast these up on taco night instead of ground beef.  They're also perfect for burritos, nachos, salads - or anyplace you might have used a Mexican flavored ground beef or bean.

canned chickpeas, drained & rinsed
taco seasoning (skip the MSG by making it yourself, recipe here)
olive oil

Place chickpeas on a cookie sheet or in a baking dish and drizzle lightly with olive oil.  Sprinkle with taco seasoning to taste, mix to coat chickpeas evenly and roast at 400* for about 30 min.  Easy-peasy.
