EASY STUFFED PEPPER SOUP RECIPE

This EASY stuffed pepper soup recipe is a cozy one-pot meal that's ready in 30 minutes! Keto stuffed pepper soup is packed with veggies and flavor.

It was extra yummy with Dad's sourdough bread.

INGREDIENTS

  • INSTRUCTIONS
  1. Heat olive oil in a dutch oven over medium-high heat, until shimmering. Add the minced garlic and saute for about a minute, until fragrant.

  2. Add the ground beef. Cook, breaking up with a spatula, for 8-10 minutes, until browned.

  3. Add the bell peppers, diced tomatoes, tomato sauce, bone broth, water, and Italian seasoning. Bring to a boil.

  4. Reduce heat and simmer for about 10-15 minutes, until the peppers are tender.

  5. Add the cauliflower rice. Cook for 3-4 minutes, until cauliflower rice is tender.

  6. Add salt and pepper to taste.

Serving size: 2 cups
