Shar's Like-Refried Beans

This recipe tastes like refried beans, but they're not. Instead, they're shock full of cheese. Yum. This recipe does require a pressure cooker and a Bosch.

2 c. pinto beans, washed & sorted
2 Tab. Mexican seasoning (can use any mixture of cumin, chile powder, onion powder, crushed red peppers, oregano, thyme, basil, black pepper)
1 tsp. cumin
2 garlic cloves, crushed
6 c. water
chicken or beef bouillon
2 tsp. crystallized ginger (optional)

1-2 c. salsa and/or 2 c. shredded cheese

Bring beans, seasonings, garlic, water, bouillon and ginger to a boil in pressure cooker pot. Put on pressure lid and bring up to second red ring. Maintain pressure for 40-55 min. Let pressure drop naturally.

Drain beans and reserve liquid. In Bosch with cookie paddles, mash cooked beans and add salsa and/or cheese and enough of reserved bean liquid to reach desired consistency. Season to taste. Enjoy plain or with chips.
