Chocolate Chocolate Cookies

Yesterday I was looking for a quick cookie recipe to satisfy my sugar addiction and stumbled upon these double chocolate yummies.  They're basically just a regular choc chip cookie with some cocoa powder added, so I didn't have to make a special trip to the store for a special chocolate bar.  They taste just like the Paradise Bakery black and white chippers when you use a combo of white and semisweet chocolate chips.

1 c. butter, softened
1 1/2 c. white sugar
2 eggs
2 tsp. vanilla
2 c. flour
2/3 c. cocoa powder
3/4 tsp. baking soda
1/4 tsp. salt
2 c. semi-sweet and/or white chocolate chips
1/2 c. chopped walnuts (optional)

Preheat oven to 350*.  In large bowl, with hand mixer (or Bosch cookie paddles) beat butter and sugar for 1-2 minutes.  Add eggs and vanilla and beat 2 min. more (light and fluffy).  In another bowl, whisk together flour, cocoa, baking soda and salt.  Stir dry ingredients into wet just until together.  Fold in chips and optional nuts.  Drop by tablespoon onto cookie sheets lined with silicone mats or parchment.  Bake 10 min. (until just barely set).  Cool slightly on cookie sheets before transferring to wire racks.
