So I got this from epicurious.com, but I changed it a little. It was super easy and yummy!
1/2 cup Unsalted Chicken broth
1/2 small onion, finely chopped
1/4 cup dijon mustard
4 garlic cloves, finely chopped
1 tsp crumbled thyme
3 chicken breasts
pepper to taste
Simmer the first five ingredients at medium-high heat. Add chicken and pepper, cover and poach about 20 minutes. Remove chicken when cooked, boil remaining liquid to sauce consistency and pour over chicken.
