Oatmeal Banana Blender Muffins



I've made these a lot the past year.  They're pretty healthy and come together quickly in the blender.  Best of all, my kids will eat them (breakfast, lunch or dinner).  The only downside is it only makes about 16 standard size muffins, so there are rarely leftovers.  Don't try doubling in your blender.  It won't fit.  Also - it's important you put the ingredients in the blender in the order below so it doesn't get stuck.  Oh - and in case you care, they're gluten free.  These are from "Mel's Kitchen Cafe".

2 ripe bananas (about 1 c.)
1/2 c. sour cream, greek yogurt (or whatever yogurt you have)
2 large eggs
1 tsp. vanilla
1/3 c. sugar (or honey)
2 1/4 c. rolled oats
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1/2 c. semi-sweet chocolate chips

Preheat oven to 350*.  Spray muffin tin with cooking spray.

Put all ingredients except chocolate chips in blender (in the order listed above).  For a Blendtec - hit the batter button or just blend until well combined.  It will look a little thin.  Add the chocolate chips and stir with a spoon.  Fill muffin cups fairly full and bake about 15 minutes.
